O.k. kidz, here’s a recipe for delicious zucchini pancakes. The shortcut recommended is: go to the Whole Foods salad bar and buy 1 cup shredded zucchini( or grate your own) and a few slices of red onion.
- Then when you’re home and ready to cook.put in bowl:
- zucchini (green or yellow)
- onion (chopped) about 2 tbsp
- 1 egg (lightly beaten)
- 4 tbsp flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp pepper
unsalted butter and veg oil
Mix everything together (except butter and oil). If the mix seems too thin from the liquid, add another tbsp of flour.
Heat a saute pan over medium heat and melt 1/2 tbsp butter with 1/2 tbsp oil. When melted, lower the heat a bit, drop spoons of batter into the pan. Cook about 2 minutes per side or looks brown and crispy.
I added sour cream, roasted asparagus and a simple cherry tomato(cut in half) salad with chopped mint, basil, olive oil squeeze of lemon.
